Texas Peanut Patties
Ingredients
2 cups Imperial granulated sugar
2 cups raw shelled peanuts
2/3 cup light corn syrup
2/8 teaspoon salt
4 Tablespoons water
4 Tablespoons butter
1 teaspoon vanilla
1 teaspoon red food coloring
1 – 2 Tablespoons softened butter for pans or foil
Instructions
Butter small aluminum pans, or a baking sheet lined with heavy duty foil, that has been lightly buttered.
In heavy, medium size boiler, combine corn syrup, sugar, peanuts, salt and water. Stir until combined. On medium heat, cook until mixture reaches 248 degrees on candy thermometer. This does not take long, but make sure it reaches 248.
Remove from heat and add butter. Stir well; add vanilla and red food coloring; stir well. Set timer for 20 minutes. Stir every minute until timer goes off. Candy should loose it’s gloss and start to get very thick. If it’s still glossy, stir for 2 or 3 more times. Spoon into buttered pans, or pour out onto buttered foil. Let set until it cools completely before removing from pans, or foil. You can break the candy into small pieces if you’re using the foil. Store in airtight container at room temperature. Keeps well.
