CCINNAMON SWIRL CUPCAKESINNAMON SWIRL CUP CAKES
1/2 cup butter, melted
3/4 cup sugar
2 eggs
2 teaspoons vanilla extract
3/4 cup milk
2 cups all-purpose flour
1 3/4 teaspoon baking powder
1/2 teaspoon salt
CINNAMON SWIRL
in a small bowl mix 3 tablespoons melted butter, 1/3 cup brown sugar and 1 teaspoon cinnamon
Preheat the oven to 350 degrees. Grease a muffin pan with oil.
In a large bowl add melted butter, sugar, eggs, vanilla and milk. Beat with an electric mixer until well combined.
In a smaller bowl mix the flour, baking powder and salt. Add the flour mixture to the wet ingredients and mix well.
Using a tablespoon scoop fill each muffin cup half full then add 1/2 teaspoon of cinnamon swirl mixture. Add another scoop of dough on top of cinnamon, adding another 1/2 teaspoon of cinnamon swirl on top. Using a cake tester or toothpick swirl around in the dough to make swirls. Repeat filling each muffin cup.
Bake for 22-24 minutes. Cool in pan for 5 minutes then remove.
