Hamburger Soup
Ingredients
1 lb extra lean ground meat
1/2 onion, chopped
1 teaspoon garlic powder
1 teaspoon Rosemary Herb seasoning
1/2 teaspoon Sweet Basil
1 rib of celery, chopped
1 teaspoon oregano
1 bay leaf
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon crushed red pepper
5 cups beef broth
2 cups chicken broth
1 14.5 can Diced Tomatoes with Basil, garlic & oregano
1 14.5 can Stewed tomatoes
1 6 oz can tomato paste
3-4 potatoes, cubed
Instructions
In a large pot add all cans of tomatoes, beef and chicken broth, onions, celery and all seasonings. Bring to a boil then pinch off ground beef in bite size pieces and drop into the tomato mixture. Cook for 15 minutes and then remove the bay leaf. Add the mixed vegetables. After it comes to a boil, cover and cook on medium heat for 15 minutes. Add potatoes and cook covered for 30 minutes.
You can add all vegetables at the same time but it doesn't take as long for the potatoes to cook and I don't like them to fall apart. You can test potatoes for doneness and cook longer if necessary.
Serve with cornbread or crackers.
