Tacos

Ingredients

1 pound lean hamburger meat

4 ounces jalapeno processed cheese (can use store brand)

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon cayenne

2 Tablespoons finely chopped or minced onion

1 package corn taco shells

6 ounces medium cheddar cheese, grated

2 tomatoes, chopped small

¼ head lettuce, shredded

1 jalepeno, finely chopped

Taco sauce or salsa

Sour Cream, optional

Instructions

Pre-heat large skillet and add hamburger. Cook on medium heat, breaking apart with spatula.  If you’re using a higher fat hamburger, drain excel oil, or soak up with paper towel.  When meat only has a little pink in it and after you’ve drained excess oil, add salt, black pepper, minced onion and cayenne pepper.  Finish cooking til meat is done.  Add 4 ounces of processed cheese, turn burner to low and add lid.  Let set for about 5 minutes; remove lid and stir.  Cheese should be melted.  Leave lid and but remove from burner.

Grate cheese, shred lettuce & chop jalapeno.  Chop tomatoes.

Optional:  Can use taco shells cold. Place corn taco shells on a baking sheet and bake for about 5 – 8 minutes.  Remove from oven and let sit a couple minutes.

Fill taco shells, starting with hamburger meat first; add shredded lettuce, tomatoes, jalapenos.  Top with taco sauce, salsa &/or sour cream.
