Country Smothered Steak

Ingredients

1 medium size round steak, cut about an inch thick

1/4 cup all-purpose flour

1 teaspoon black pepper

1 teaspoon salt

3 Tablespoons vegetable oil

1 large onion, sliced thin

2 cans beef broth, low sodium

Instructions

Trim excess fat off round steak; cut into serving size pieces, about the size of the palm of your hand. Combine seasonings and add to flour; whisk together. Dredge steak pieces in seasoned flour. Add vegetable oil to heavy skillet on medium high heat. Brown steak on both sides quickly in hot cooking oil. Place browned steak in oven proof baking dish. Pour the beef broth in skillet used to brown steak in & bring to a boil and cook for a couple of minutes. Use a whisk to make sure you get all the drippings and broth out of the skillet. Place sliced onions on top of steak and pour broth over steak. Pre-heat oven to 350 degrees. Bake until fork tender. Serve over a bed of mashed potatoes or rice.
