Creamy Chicken and Rice
Ingredients
4 large chicken breasts
2 cups uncooked rice, cooked according to package directions
1 large can Cream of Chicken Soup (22.6 ounce can)
32 ounce box chicken broth
2 teaspoons salt
1 ½ teaspoon black pepper
Instructions:
Add chicken to large pot; add enough water to cover chicken; add 2 cups chicken broth, salt and black pepper. Cook until fork tender. Remove chicken from broth and let cool before shredding or cutting into bite size pieces. Strain broth and return to same pot. Add remaining chicken broth & bring to a boil on medium heat; whisk in cream of chicken soup. Turn burner to low while whisking in to prevent it from boiling over. Add cooked rice and chicken. Let simmer on low for about 10 minutes. May need to add more salt.
