Big Boy Strawberry Pie
Ingredients
1 uncooked pie crust, cooked at 450 for 12 minutes (use pie weights)
1 ¼ cup granulated sugar
6 Tablespoons corn starch or arrowroot
1 ¼ cup water
½ teaspoon salt
3 Tablespoons strawberry jelly
2 cups strawberries, washed, hulled and sliced
7 whole strawberries with stems for garnishing
Instructions
Bake pie crust according to package directions; remove and cool for 30 minutes
In a small saucepan, over medium heat, whisk together sugar, salt, cornstarch or arrowroot and water. Bring to a boil and reduce heat and simmer for a minute or so until thickened.
Whisk in strawberry jelly. Remove from heat and cool completely.
Add sliced strawberries to the cooled pie crust, then pour strawberry jelly mixture over sliced strawberries. Refrigerate for a couple hours, or until set.
Whipped Cream
2 cups heavy whipping cream
4 ounces instant vanilla pudding mix
3 Tablespoons powdered sugar
1 teaspoon vanilla extract
Chill bowl and beaters. Pour 2 cups heavy whipping cream into chilled bowl. Beat slightly, then add 4 ounces of instant vanilla pudding mix, 3 Tablespoons powdered sugar and beat until stable, but do not overbeat. Add 1 teaspoon vanilla extract. Beat until combined. Pipe onto chilled strawberry pie.
