Meat Pies

Ingredients

Filling:

1 lb ground beef

½ uncooked rice, cooked according to package directions

2 tablespoons minced onion

1 can Rotel

1 can mild chopped green chilies

1 teaspoon salt

½ teaspoon black pepper

Dash cayenne

Salsa for dipping

Instructions:

Cook rice according to package directions;  Set aside. 

In pre-heated skillet, add ground meat, salt and black pepper & cayenne and cook until done.  Drain any excess fat.  Add Rotel and chopped green chilies, and onions.  Cook for about 5 minutes until onions are soft and liquid has reduced from Rotel.  Add rice and stir.  Set off burner and let cool. 

Dough:

4 cups flour tortilla mix

½ cup Crisco vegetable shortening

¾ - 1 cup warm water

NOTE:  If you’re using an air fryer, you’ll want to do an egg wash. 1 large egg, beaten to brush on top of meat pies

If you’re fyring the meat pies, you’ll need a 64 ounce bottle of vegetable oil to fry in (use a good oil like Crisco or Wesson). Add to a large pre-heated pot and heat oil to about 375 degrees.  Do not add pies to oil until it’s hot.  This will cause your pies to be very greasy.  Cook until golden brown on both sides; usually takes about 4 – 5 minutes. Remove and place on paper towel lined baking sheet to drain, or wire rack. Serve with salsa.

Instructions:

In large bowl, add flour tortilla mix, Crisco and warm water.  Mix until well combined.  Form dough into ball, wrap in plastic wrap and refrigerate for at least an hour.  Remove from fridge and using a large cookie scoop (3-4 Tablespoons), make dough into large balls.  Place on parchment or wax paper.  Lightly flour a pastry mat and using a rolling pin, roll into about a 6” circle.  Add enough meat filling (a couple large spoon fulls) to center of circle.  Fold over like a half circle, press edges down with your fingers; using a fork dipped in flour, press edges down.  Place on parchment lined baking sheet to rest.  NOTE:  This is very important.  If you fry or bake, they need to rest at least 15 – 30 minutes to avoid pies from coming open. 

If baking in air fryer, brush with egg wash.  If frying, do not use egg wash.
