Baked Sweet Potato Pie
Ingredients
3 medium sweet potatoes
1 1/3 cup Imperial granulated sugar
½ stick salted butter, melted
2 eggs
½ cup evaporated milk
1 teaspoon cinnamon
¼ teaspoon cinnamon plus (or, 1/8 teaspoon allspice + 1/8 teaspoon nutmeg)
1 teaspoon vanilla extract
½ teaspoon salt
1 unbaked 9” pie shell
Vegetable shortening for greasing sweet potatoes
Instructions
Pre-heat oven to 375 degrees.
Prepare pie shell; can use homemade, or store bought.
Wash and pat dry sweet potatoes; generously grease with vegetable shortening. Place on baking pan and bake for about an hour, or until done. Let cool, then cut sweet potato in half and scoop out.
In small bowl, add sugar, salt, cinnamon, cinnamon plus (or allspice and nutmeg). Whisk together.
In large mixing bowl, beat eggs and add sugar/spice mixture, butter, evaporated milk and mix until well blended. Add sweet potatoes and beat with mixer until all incorporated. Place pie pan on baking sheet; carefully pour mixture into pie pan. Bake for about 25 minutes, or until a knife comes out clean when inserted into pie. Refrigerate after cooling, if not serving immediately.
