Harvest Biscuits

8 Pillsbury Grand Buttermilk or honey butter biscuits (can use homemade or another brand; I tested with Pillsbury)

1 large crisp apple, or apple of your choice

2 Tablespoons water

½ teaspoon ground cinnamon

Dash salt

Core, peel and chop apple into small pieces, no bigger than 1/2 inch.  Add to small saucepan and cook on medium heat for about 4/5 minutes. 

 

1/3 cup granulated sugar

3 Tablespoons arrowroot or cornstarch

1 teaspoon butter

2 drops vanilla extract

Whisk together til combined.  Add to cooking apples and stir good; continue cooking until mixture thickens, stirring continuously.  After mixture thickens, add 1 teaspoon butter and 2 drops vanilla extract.  Stir good, remove from saucepan and pour onto plate to cool. (Mixture should be completely cooled before adding to biscuits.

 

1 egg, beaten with 1 teaspoon water

Caramel sugar optional

After mixture is completely cooled, pre-heat oven to 380.  Lightly dust a pastry mat, or counter with flour.  You will need 2 rolled out biscuits per harvest biscuit – one for top and one for bottom.  Roll biscuits  out to about a 5 inch circle (rolled out biscuit should be bigger than your cutter, as dough needs to be thinned out).  Brush egg wash mixture about 1 – ½ inches of rolled out biscuit.  Put 1 Tablespoon apple mixture in center of one rolled out biscuit.  Place the other rolled out biscuit on top and gently press down edges.  If you have a seal and cut, use that to cut and seal the 2 biscuits together; if not, use a fork to seal all edges.  Using a thin spatula place on parchment lined baking sheet.  Brush egg wash over top.  Repeat with remaining biscuits.  If you have leftover apple filling, you can break remaining biscuits in half and top with apple mixture, or make additional harvest biscuits.  Bake for about 15 minutes, or until done and golden brown.

 

1 cup powdered sugar

2 Tablespoons whole milk or heavy cream (may need to add more to get icing consistency. 

Dash salt

½ teaspoon vanilla extract

Mix together until smooth with whisk or fork. 

Remove harvest biscuits from baking sheets and place on wire rack to cool.  Drizzle with icing.
