Irish White Soda Bread

Ingredients

1 pound all-purpose flour, plus extra for dusting

1 teaspoon salt

1 teaspoon baking soda

14 ounces whole buttermilk        

Instructions

Preheat oven to 450 degrees.  Dust a baking sheet with flour.

Mix the flour, salt & baking soda in a large mixing bowl; whisk together.  Make a well in the center and gradually add the buttermilk, drawing the dry ingredients from the sides of the bowl.  Mix until a moist dough forms.

Turn the dough out onto a floured pastry mat and shape into a round about 2 inches high.  Place the round on the prepared baking sheet and use a floured knife to cut a deep cross in the middle.

Bake for 30 – 45 minutes or until the loaf sounds hollow when tapped on the base.
