Mini Nutella Doughnuts
Ingredients:
1 can refrigerated large biscuits (8 count)
2/3 cup Nutella
1 large egg, room temp
1 Tablespoon water
1/2 cup powdered sugar for dusting
Vegetable oil for frying doughnuts in (will need about a quart, depending on pan size)
Instructions:
Using a heavy Dutch oven, deep heavy pot or deep skillet, add enough oil to deep fry doughnuts in. NOTE: If you pre-heat your Dutch oven, oil will rise to temp faster. Heat oil to 350 degrees, making sure you don’t get oil to hot before frying. Monitor oil while it’s heating.
Whisk egg with water. Open can of biscuits. Using a pastry mat, or floured surface, dust lightly with flour (can use All-purpose or self rising). Roll each biscuit into a 6 inch circle. Brush lightly with beaten egg/water. Using a bench scraper or plastic knife (so you don’t cut your pastry mat), Cut pie shape into 4 equal pieces. Add 1 teaspoon of Nutella onto each piece. Gently spread over piece. Bring corners together over filling and pinch edges together to seal; it will look like a tiny pillow. Set aside and repeat with remaining biscuits. Add several at a time to hot oil, seam side down, making sure not to crowd. The size of the pot you’re frying them in will depend on how many you can fry at a time. It takes about 2 minutes per side to fry. Drain on paper towel. Sift powdered sugar on top of doughnuts.
