PEANUT BUTTER CHEESECAKR
Cheesecake ingredients
3 8 -oz blocks of cream cheese, softened
1 cup creamy peanut butter
3/4 cup powdered sugar
1 teaspoon vanilla extract
1 1/4 cups heavy whipping cream
Hot fudge (ice cream topping or make your own)
1/2 cup peanut butter (opt) melted in microwave
Crust:
31 chocolate Oreo sandwich cookies (leave filling cream inside)
5 tablespoons unsalted butter, melted
In a food processor add Oreo cookies and pulse till it crumbles. You want a fine crumble. In a bowl add the Oreo and melted butter. Using a fork mix till all is moistened. Press into a 9-inch spring form pan, going up about an inch up the sides. Put in the refrigerator to chill while you make the filling.
In a mixing bowl beat cream cheese with an electric mixer until smooth. Mix in the powdered sugar and beat again till creamy. Add the vanilla and slowly add the whipping cream while still mixing. Mix until stiff peaks form.
Spread the filling into the chill crust. Chill for an hour or until set. Drizzle hot fudge sauce and melted peanut butter over pie.
OPT:
Chop up mini Reese’s peanut butter cups to decorate top. You can also add whipping cream around the edges.
