Hominy Casserole

Ingredients

1/2  tablespoon butter

10  slices of bacon

1/2  cup chopped onions

1  red bell pepper, chopped

1  29 oz can of hominy, drained and rinsed

1/2  teaspoon paprika

3/4 cup half and half

3/4  cup Cheddar cheese, shredded

1/2  cup Monterey Jack cheese, shredded

1/2  teaspoon salt

1/2  teaspoon black pepper

3/4  cup plain breadcrumbs

 

Instructions

Preheat the oven to 375 degrees. Butter a 2 qt baking dish and set aside.

In a skillet, fry the bacon until crispy. Drain on a paper towel. Pour off most of the grease leaving enough to saute the onions and red bell peppers. Cook the bell peppers and onions until tender.  Add the hominy, half and half, paprika and cook until combined. 

Chop the bacon into small pieces and add to the skillet. Add 1/2 cup of cheddar cheese and a 1/4 cup of Monterey Jack and stir until combined. Add salt and pepper and stir again.

Pour mixture into the baking dish. Top with remaining cheeses and the breadcrumbs.

Bake for 20 minutes or until it's bubbling. Let rest for a few minutes before serving.
