Jazzy Jambalaya

Ingredients

1 package (6.8 oz) RICE-A-RONI Spanish Rice

1 cup cooked chicken, chopped

1 cup chopped onion

1 cup chopped green bell pepper

1 teaspoon minced garlic

3 tablespoons vegetable oil

1 (14 1/2 can) can tomatoes,chopped and undrained

8 oz package frozen cleaned precooked shrimp

dash of hot sauce is optional

 

Instructions

In a large skillet, combine rice-a-roni mix, chicken, onion, green pepper, minced garlic and oil. With heat on medium high, saute and stir until the rice is golden brown.

Stir in 2 cups water, tomatoes, contents of seasoning packet and hot sauce if you want. Turn heat up to high and bring this to a boil. Then turn heat down, cover and simmer for 10 minutes. 

Stir in thawed shrimp and cover again. Cook for 8-10 minutes or until liquid is absorbed and shrimp is pink.
