Peach Crumb Bars

Ingredients

3  cups all purpose flour

1 3/4  cups Imperial Extra Fine sugar, divided

1  teaspoon baking powder

1/2  teaspoon salt

1/4  teaspoon cinnamon

1  cup butter, 2 sticks

1  egg

1  teaspoon vanilla

10  medium peaches peeled and chopped

1 1/2  teaspoon almond extract

5  teaspoons cornstarch

 

Instructions

Preheat the oven to 375 degrees.

In a bowl whisk together the flour, 1 cup of Imperial sugar, baking powder, salt and cinnamon. Using a pastry blender or fork cut in the butter until it's crumbly.

In another bowl, whisk egg and vanilla until blended. Add this to the flour mixture. Use a fork to stir until it's crumbly.

Set aside 2 1/2 cups of crumbs for the top. Press the remaining mixture onto the bottom of a 9x13 inch greased pan.

In a large bowl add chopped peaches and toss with almond extract. In a small bowl mix cornstarch and remaining 3/4 cup of Imperial sugar. Add this to the peaches and toss to coat.

Spread peaches evenly over the crust. Sprinkle reserved topping over peaches.

Bake until lightly browned for about 40-45 minutes and the filling is bubbly.  Cool in the pan on a wire rack.  Cut into bars.
