Triple Cheese Potato Cake with Ham

Ingredients

1/2  cup dry bread crumbs + 2 tablespoons

3-4  lbs potatoes, peeled and cubed (about 8 cups)

1/2  cup heavy whipping cream

1/4  cup butter

2  tablespoons minced fresh chives

1  teaspoon salt

1/2  teaspoon black pepper

3  large eggs

4  slices mozzarella cheese

4  slices Swiss cheese

4 -5  oz thinly sliced deli ham

2/3  cup grated Parmesan cheese

2  tablespoons butter, melted

 

Instructions

Preheat the oven to 350 degrees.

Grease a 9 inch springform pan then dust the 1/2 cup of breadcrumbs around the sides and the bottom.

Place diced potatoes in a large dutch oven or pan, add enough water to cover the potatoes. Bring to a boil then reduce the heat and cook uncovered for 10-15 minutes. Using a colander, drain the water off and return to the pan. Mash the potatoes gradually adding the cream, butter, chives and salt and pepper. Set aside and cool slightly.

Add eggs 1 at a time; stir to blend after each egg. Spread half of the potato mixture  into a springform pan. Layer with cheese slices, ham and then potato mixture again. 

In a small bowl mix Parmesan cheese and remaining bread crumbs. Stir in the melted butter and sprinkle over top of the potatoes.

Bake for 35-40 minutes or until golden brown. Let cool on wire rack for 10 minutes,

Loosen sides from pan with a knife.
