Refrigerator Pickles
Ingredients
12 cups thinly sliced unpeeled cucumbers
1 Tablespoon pickling salt
2 mediums onions, thinly sliced (about 2 cups)
2 cups sugar
1 Tablespoon celery seed
1 Tablespoon mustard seed
1 cup white vinegar
Instructions:
Combine sliced cucumbers and salt in large bowl. Let stand at room temperature for 30 minutes. Drain well in colander. Stir in sliced onions. Combine sugar, celery seed, mustard seed and vinegar in a small bowl. Pour vinegar over ingredients and mix well. Ladle ingredients in clean hot jars , cover with lids and tighten. After jars are completely cooled, store in refrigerator for at least 8 hours before serving. Pickles will keep in fridge for three months.
