Breakfast Cones

Ingredients

10 large flour tortillas,10 inch

5 eggs, beaten

1 tablespoon bacon drippings 

1 tablespoon butter

2 slices Velveeta cheese

3 slices bacon, cooked crispy

1/4 cup diced ham

2 sausage patties

2 tablespoons finely chopped onion

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup cheddar cheese, shredded

Picante Sauce

20 wooden toothpicks

 

Instructions

Preheat the oven to 400 degrees. 

Cut each tortilla in half and roll to make a cone. Use wooden toothpicks to seal tortilla together.  Pace each cone upside down on a cookie sheet. Spread melted butter over each tortilla cone. Bake for 8-10 minutes.

Cut up the bacon into small pieces.

In a skillet fry the bacon, onions and two sausage patties until done. Break up the sausage as you cook it. Add the ham until it's hot. Drain off all grease except for a tablespoon. Add butter and beaten eggs, salt and pepper. Stirring till the eggs are almost done then add the Velveeta slices. stirring till the cheese melts and eggs are done.

Remove the toothpicks from the cones. Add a little of the cheddar cheese in the bottom of each cone. Add a spoon of egg and meat mixture and a half spoon of picante sauce then repeat till cone is filled. Add a little cheese on top.

TIP:

You can omit the Picante Sauce if you wish. You can make using only one kind of meat.
