4th of July Dessert Cups

Ingredients

2  Pie crust (20 cups), store bought or homemade

2  8oz packages of cream cheese, softened

2  cups powdered sugar

2  cups heavy whipping cream

2  teaspoons vanilla extract

Strawberries, sliced

Blueberries

 

Instructions

Preheat the oven to 350 degrees. 

If using homemade pie crust, roll out dough as if you were making a pie. If using store pie crust just unroll the crust, don't roll out any larger than it is (you need it a little thick). Using a biscuit cutter, 3-4 Inch in size, cut circles out. 

You will need a muffin pan to bake the crust. Turn the muffin pan upside down and use the bottom of the pan. No need to grease the pan.

Take each circle and wrap it around the bottoms of each cup. Press the sides down, forming a cup. Use a fork to plick the bottoms and sides to prevent the crust from having air under them. Be careful not to press down too hard making the dough too thin. Don't let the dough separate or it will break during baking.

Bake for 12 minutes depending on your oven.

 

Filling

In a large bowl, beat cream cheese and powdered sugar until smooth. In another bowl whip the heavy whipping cream until stiff, about 3-4 minutes. Fold the whipped cream and vanilla in with the cream cheese mixture. 

Spoon into cooled cups and top with sliced strawberries and blueberries.

If you don't want to make small cups, make it into a whole pie.
