S’mores Sandwich Cookies

Ingredients

¾ cup salted butter, softened (1 ½ stick)

½ cup granulated sugar

½ cup light brown sugar, packed

1 large egg

1 ¼ cup All purpose flour

1 cup graham cracker crumbs

1 teaspoon vanilla extract

½ teaspoon baking soda

½ teaspoon salt

Instructions

Pre-heat oven to 375 degrees.

Cream together butter and sugars in large mixing bowl until fluffy.  Add egg and vanilla, mixing well until combined.  Add flour, graham cracker crumbs, baking soda and salt.  Mix until well combined.  Using a large cookie scoop (3 Tablespoon) scoop cookies out and place on silicon or parchment lined baking sheet, or a lightly greased baking sheet. Bake for 12 minutes.  Let cool on pan for 8 – 10 minutes.  Remove and finish cooling on rack.

Filling: (s) Use either recipe for filling; note:  Marshmallow is more traditional like s’mores; powdered sugar marshmallow is a little heavier and not as sticky.

Marshmallow:  Use ¾ jumbo marshmallow per cookie sandwich; put on microwave safe plate and microwave for about 12 seconds, until puffy.  Add to bottom of cooled cookie.  Place other cookie, bottom side down on marshmallow.  Repeat with remaining cookies. 

Powdered sugar marshmallow filling:

2 ¼ cup powdered sugar (if lumpy, sift first)

1 ½ sticks salted butter, softened

6 jumbo marshmallows slightly melted in microwave (microwave until puffy, about 15 seconds)

½ teaspoon salt

½ teaspoon vanilla extract

Add powder sugar and butter to large mixing bowl.  Start off beating slow so powdered sugar doesn’t splatter out.  Mix; add salt and melted marshmallows and vanilla.  Beat until well combined.

Chocolate drizzle topping:

1 ten ounce bag semi sweet chocolate chips

1 cup heavy whipping cream

Heat heavy whipping cream in microwave safe dish in 20 second intervals until heavy whipping cream is hot; skim will form on top; do NOT boil.  Remove and pour room temperature chocolate chips in hot cream.  Cover with foil and let stand about 5 – 8 minutes.  Stir with whisk until smooth.  (NOTE:  If cream didn’t get hot enough, you may have to microwave it again for a few seconds).

Drizzle on top of cookie.  Can use a bottle with top, or use a fork or whisk to drizzle on top of sandwich cookie.  Let set until chocolate is set.  NOTE: Can place in fridge to set quicker.
