Applesauce Cake with Cinnamon Cream Cheese Frosting
Ingredients
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
2 cups unsweetened applesauce
2 eggs
1 cup vegetable oil
3/4 cup light brown sugar
3/4 cup sugar
1 1/2 teaspoons vanilla
3/4 cup walnuts or pecans
Cinnamon Cream Cheese Frosting
1 cup unsalted butter, softened
8 ounces cream cheese, softened
1 teaspoon cinnamon
1 1/2 teaspoon vanilla
3 1/2 cups powdered sugar
Instructions
Preheat the oven to 350 degrees. Grease a 9x13 inch pan with grease and flour or spray.
Mix together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Whisk well and set aside.
In a large bowl combine the applesauce, eggs, vegetable oil, sugar, brown sugar and vanilla. Mix well until combined.
Combine the dry ingredients with the wet mixture a cup at a time. Use a spoon or spatula to mix and don't over-mix. Fold in the nuts.
Pour into the prepared pan and bake for 30-35 minutes.
When the cake is done, cool on a wire rack until completely cool.
While the cake is cooling, prepare the frosting.
Use an electric mixer to beat cream cheese, butter, cinnamon and vanilla until smooth and fluffy. Gradually add the powdered sugar and beat until the frosting is light and creamy.
Frost the cooled cake.
