Broccoli, Rice, Cheese and Chicken Casserole
Ingredients
2 cups chicken broth
2 cups uncooked rice
2 chicken cooked breast, shredded
1 can cream of chicken soup
1 can cream of mushroom soup
1/4 cup butter
1 6oz can evaporated milk
1 package frozen chopped broccoli, thawed
1 small onion chopped
1 jar Cheese Whiz
1 cup cheddar cheese, shredded
Instructions
Cook chicken breast in water. You can add some chicken bouillon cubes. When chicken is done, save the broth, enough to make two cups. I strain my broth so it will be clear. Shred the chicken and set aside.
Let chicken broth cool and add to a sauce pan and add the rice. When it comes to a boil turn heat down to low, cover and cook for 20 minutes.
Preheat the oven to 350 degrees.
In a skillet add butter and chopped onions. Saute until onions are tender.
In a 9x13 inch baking dish add the butter and onions and coat the dish. Pour the cooked rice, shredded chicken, cream of chicken soup, cream of mushroom soup, broccoli and the evaporated milk. Open the jar of cheese and melt in the microwave, then pour the cheese whiz into the baking dish. Stir till well combined.
Top with cheddar cheese. Bake for 30-35 minutes.
