Pumpkin Baked Donuts

Ingredients

1 3/4 cups of all purpose flour

1/2 cup brown sugar

1/2 cup sugar

1 1/2 teaspoons baking powder

1 teaspoon pumpkin pie spice

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup vegetable oil

2 eggs

1/4 cup milk

1 teaspoon vanilla extract

1/2 cup pure pumpkin

 

Instructions

Grease a donut pan. Preheat the oven to 325 degrees.

In a small bowl add the flour, baking powder, pumpkin  pie spice, ground cinnamon and salt. Whisk together well.

In a  large bowl add brown sugar, sugar and oil, stir well.  Add eggs, milk and vanilla, stir well. Stir in the pumpkin.

Combine the dry ingredients to the wet ingredients and stir until combined. Don't overmix.

Using a spoon or piling bag and fill the donut pan.

Bake for 12-15 minutes.

 

Cinnamon Sugar Glaze

1 stick (1/2 cup) melted butter

1/2 cup sugar

1/2 teaspoon ground sugar

In a small bowl mix the cinnamon and sugar. Use the bowl you melted the butter

to dip each donut in then dip in the sugar mixture to coat the donut,

 

Cream Cheese icing

4 oz cream cheese, softened

4 tablespoons butter, softened

1 teaspoon vanilla

1/4 cup milk

1 cup powdered sugar

In a bowl using an electric mixer, beat butter and cream cheese till smooth. Add vanilla and milk and beat again. Add powdered sugar and beat till smooth.

You can use cinnamon sugar topping or cream cheese to icing the donuts.
