Mexican Rice Casserole

Ingredients

1 pound extra lean ground beef

1/2 cup chopped onion

1/2 teaspoon salt

1 teaspoon black pepper

2 tablespoon Taco seasoning

1 teaspoon garlic powder

1 cup rice

1 1/2 cups beef broth

1 15 oz can black beans, drained

8 oz tomato sauce

1/2 cup salsa

 1 cup shredded cheese

 

Instructions

Cook ground meat, onions, salt and pepper in a large skillet until meat is done. Drain off any grease if there is any. I use a paper towel to absolve the grease.

Add taco seasoning and garlic powder to the meat mixture, stir well. 

Add the rice, broth, beans, salsa and the tomato sauce.  Bring to a boil. Turn down the heat, cover with lid and cook for 18-20 minutes or until the rice is tender. 

Top with cheese and cover with a lid for 2-3 minutes until cheese is melted

Tip

You can add drained whole kernel corn to the casserole if you like or leave out beans if you like.
