Potato Scones
Ingredients
3 ½ ounces all purpose flour, plus extra for dusting
1 teaspoon baking powder
Large pinch of salt
2 ounces salted cold butter, cut into pea size pieces, plus extra for greasing
4 Tablespoons mashed potatoes
¼ cup whole milk (for mixing & brushing tops of scones)
Butter to add when serving hot scones
Instructions
Preheat oven to 350 degrees. Grease a baking sheet and set aside.
Sift the flour, baking powder and salt into a large mixing bowl. Whisk together. Rub in tiny butter pieces until all incorporated into flour mixture. Add the potatoes and a little milk (add a Tablespoon at a time) until you have a soft dough. Turn out the dough onto a lightly floured pastry mat. Roll out to about ¾ inch thick. Use a floured cutter to cut rounds, then place them on the greased baking sheet. Brush the tops with milk and bake for about 15 minutes, or until golden brown. Transfer to wire rack and cool slightly. Serve warm with butter.
